The ingredients for Stacy's Chicken Pot Pie are:

1 can 98% Fat Free Cream of Chicken Soup
1 can 98% Fat Free Cream of Mushroom Soup
2 chicken breasts boiled and diced
1 bag frozen Mixed Veg (I use peas, carrots, corn, & green beans Kroger brand)
2 cups cooked diced potatos (canned for NI)
1 onion diced (I sometimes use Kroger mirepoux with onion, celery, and either carrots or bellpepper instead)
1 cup chicken broth (you can reserve from boiled chicken)
1 Pillsbury pie crust roll (found near biscuites in dairy section- I use store brand usually)
Salt, Pepper, and Poultry seasoning to taste


How Do I Make Stacy's Chicken Pot Pie?

Here is how you make Stacy's Chicken Pot Pie:

Makes 8 servingsPreheat oven to temp on pie crust package.Boil chicken and then dice when cool. You can reserve 1 cup of broth for later if you like. In the mean time saute onion (or mirepoux) in nonstick large pot. Use a lil bit of olive oil or spray if you don't have a nonstick pot. Add frozen vegtables after about 3 min. Cook till onion is translucent and vegetables are heated through.Add soups and broth to vegtable mixture. Allow to come to a simmer and then add diced chicken and potato. Add Salt, Pepper, and Poultry Seasoning to taste. (I normally use 1 to 2 tsp of the Poultry Seasoning)Pour mixture into 13x9 (or whatever size you have) casserole dish and top with pie crust. I usually trim the sides of the round crust and put those on the ends to cover the whole pan but it's really nice with a lattace crust too. Make sure to make small cuts in the crust for steam to escape if you don't use a lattace.)On a side note, Pillsbury Honey Butter biscuites make an excellent crust on this too. I pull them apart and use the layers on top. Hubby loves it this way.)Bake for about 5 min longer than the pie crust directions say. Keep an eye on it because all ovens are different.
