2 c frozen mixed veggies, thawed ( I use steamfresh, they make a difference!)
.5 pound red potatoes, diced into large chunks, skin on
2 cans 98% fat free cream of chicken soup
.25 cup chopped fresh parsley
2 hard boiled eggs, chopped
1 can(8) grands reduced fat biscuits
1 knorr chicken bullion cube

boil chicken with bullion cube, remove when done to cool, meanwhile, add potatoes ,celery and mixed veggies to the pot. Boil low until potatoes are just tender, add broccoli and parsley, cook until soft. mix soup in a bowl with 2-3 cans of water from the veggies and the eggs. Chop chicken and return to pot and mix. With a slottedd spoon, remove veggies and chicken from the pot and transfer to a 9x13 casserole dish sprayed with cooking spray. Pour soup mixture over veggies and chicken, stir to combine. Add additional hot water from the pot to adjust cosistency, if desired. Top with biscuits, flattened slightly. Bake at 375 for 15 to 20 minutes.
