1-2 lbs Chicken (boneless skinless breast works best)
2 cups brown rice
1 can pigeon peas (you can substitute black eyed peas)
marinade for chicken
1/4 c pineapple juice ( I use the juice from a can of pineapple in 100% juice)
1 package goya Adobo Sazon
1 tsp Oregano
1tsp Thyme
1 tsp Parsley
1 tsp Garlic powder, onion powder and celery salt
1/2 tsp pepper
3 tsp Worcestershire sauce
1 tsp seasoning salt

cut chicken in bite sized pieces, place in a bowl, mix together the pineapple juice and all seasonings, pour over chicken and allow to marinate at least 1hour. Cook rice according to package directions.
