I make this with the Mia ready made pizza crusts... The package comes with 2 pizza crusts and sauce included. My kids will not eat toppings so I puree vegetables in with the sauce and hide it on their pizza... But this story is about Ma and Pa's pizza of the 2 pizzas that come in the package.

For this recipe I purchase the package of 2 mia pizza crusts... for this recipe you only use one crust.- Make the other pizza for your kids or save for another time. One pizza serves 2 people for 2 days. I make this for dinner and then have the leftovers for lunch the next day. The serving size is for 1 slice 1/8 of the crust. My husband and I usually eat 2 slices each with a salad.

1 pizza crust of the "Mia" whole wheat pizza crusts with one sauce packet

Toppings:

1 large chicken breast (cook before putting on the pizza)
17 slices of Hormel Turkey Pepperoni (I like to dice these into little squares and sprinkle on)
1/2 cup fresh spinach leaves
1/2 cup fresh basil leaves chopped
1 large red pepper diced
1/4 cup minced garlic (the secret ingredient!)
1/2 medium onion diced
1 cup lowfat shredded mozzarella cheese

preheat oven to 425 degrees

Cook chicken in a pan and season with Italian seasoning or "Herby." Cook until it is white. Cut it up into approximate 1 inch chunks.

Cut up the toppings and get ready to have some fun.

Spread the sauce on the crust and with half of the cheese sprinkle a ring around the pizza edge.

Put the toppings on- I usually put the spinach and basil on top of the sauce, Then I spread the minced garlic on top of the leaves. Then layer the chicken and turkey pepperoni on top of the minced garlic. Sprinkle the remainder of the cheese on top and then sprinkle the red pepper and onion on top of that.

Put in the oven and set the timer for 7-10 minutes. I put my pizza directly on the rack because I like the crispy crust but you can put on a baking sheet if you wannoooo.

Cut the pizza in half and hide the other half of it (from your husband) for lunch the next day.

There should be 4 slices left... Eat 2 slices and be happy.

All of my recipes are 2 day recipes. I like to make half for dinner and then have the second half the next day for lunch.
