4 tbsp of pesto

5 cloves of garlic

1/4 olive oil

1 tsp margarine (stick)

1/4 lemon juice

1/4 water

Here is how you make Tomatoless Chicken Eggplant Pizza:

Preheat the oven or toaster oven to 425 degrees F. Brush both sides of the eggplant with the oil and season with the salt and pepper. Arrange on a baking sheet and bake until browned and almost tender, 6 to 8 minutes, turning once. Cut chicken breast into small cubes, put in a bowl and add lemon juice. Melt margarine in pan, add 1/4 cup of water. Transfer chicken and cover. Saute on medium heat until chicken is fully cooked. Allow chicken to cool. Mince 2 cloves of garlic and add to the chicken and it's juices.Spread 1-2 tablespoons of Roasted Red Pepper Sauce* (or spaghetti sauce) on each eggplant slice (1 for small slices, 2 for big slices). Top with chicken and cheese. Bake until the cheese melts, 3 to 5 minutes. Serve hot.Serves 6. *Roasted Red Pepper Sauce:Blend one 12oz jar of roasted red peppers.
