6 chicken thighs or drumsticks, or one whole chicken cut into pieces. Skin removed, bone in.

In a blender or food processor, puree the onion and garlic with the tomato puree, lime juice, and as much of the water as you need.Heat the olive oil in a large, heavy saucepan (I use cast iron). Add the cumin and stir briefly, then add the pureed tomato mixture. Let this simmer for a few minutes.Cut the chicken into serving-size pieces (I usually cut breasts in half, if I'm using them). We use skinned, bone-in pieces, but it could be done with boneless as well.Salt the chicken pieces, then add them to the tomato mixture. Add water (or chicken stock) to the pan until the tomato mixture covers the chicken. Bring to a simmer, cover, and leave simmering for about 30-45 minutes.
