6 boneless chicken breasts
4 cloves of garlic, minced
1/4 tsp. crushed red pepper
1 can (19 dl oz/540 ml) diced tomatoes, undrained
1/2 cup (1/2 of 250 g brick) Cream cheese Spread
1 cup, skim Mozzarella Shredded Cheese
2 T. Parmesan Grated Cheese
2 T. fresh chopped basil


How Do I Make Chicken Pomodoro?

Here is how you make Chicken Pomodoro:

Heat 1Tbsp oil in large nonstick skillet on medium heat. Add chicken, cook 5 to ten minutes on each side or until browned on both sides. Add remaining oil to skillet. Stir in garlic and crushed pepper, cook and stir 30 sec. Add tomatoes and cream cheese cook and stir 2 to 3 minutes or until cream cheese is melted and sauce is well blended. Simmer 10 to 15 minutes or until chicken is done (170oF).Meanwhile cook pasta as directed on package, omitting salt.Top chicken with mozzarella, Parmesan and basil. Remove from heat.
