1 lb lean pork loin, cubed
14 oz Eckrich - Skinless Smoked Turkey Sausage, sliced
1 medium onion, diced
1 cup diced celery
1/2 medium green bell pepper, chopped
2 cups uncooked white long grain rice
1 tsp Kitchen Bouquet
7 2/3 cups water, divided
1 tsp salt
1 Tbsp cayenne pepper
1 can 98% fat free cream of mushroom soup
3 green onions, (green parts only), chopped

Here is how you make Jambalaya - chicken, pork, and sausage:

Cut meat into cubes and season with salt and cayenne pepper. Brown meat in non-Teflon pan with oil. Then stir in onion, celery, and green pepper. Saute until onions are clear. Add kitchen bouquet. Add mushroom soup and 2 cans of water. Mix well and set heat to medium and cover. Cook until pork is tender. Add 2 cups of rice and 5 cups of water. Mix well and cover at medium heat and don't open!! Check tenderness of rice at 30 minutes, mix and add more water if dry. Cover and cook until rice is tender. Test seasoning, and season to taste if necessary. Add green onion tops, mix and serve.Makes 12 servings, about 1 cup each.
