Here is how you make Pork Rind Fried Chicken:

First, finely crush (I use a food processor) the pork rinds & put in a bowl and mix with the black pepper.Scramble the eggs in another bowl (add a tbsp of water)Heat the oil in a frying pan (I use cast iron) at a depth of about 1-1.5 inches.Dip the chicken into the beaten eggs and press it into the pork rinds to cover. Carefully put into the hot oil & fry for a few minutes on each side until cooked.Drain on paper towels. I make up the entire bag of chicken at a time and eat it all week!
