In medium sauce pan, boil the diced potatoes until tender (approx 6-8) minutes. While potatoes are cooking, in a large saute pan add oil, onion, garlic, and peppers. Saute on medium until onions have a slight brown. Add in tomatoes, chicken, chicken stock, mushrooms, potatoes and seasonings.
