500 grams fresh tomatoes or a can of chopped tomatoes
300 grams sweet potato
300 gram cauliflower
1 red onion
1 slice ginger, about 1" long
350 grams chicken breasts, skin removed.

1.5 T. olive oil
2 (or more) Tablespoons thai red curry paste
250 ml chicken stock
2-2.5 C (a whole can) coconut milk


How Do I Make Thai Chicken and Sweet Potato Curry?

Here is how you make Thai Chicken and Sweet Potato Curry:

Wash tomatoes, cut out stems, seed and dice. Peel and chop sweet potato into 1/2 inch cubes. Wash cauliflower, cut off rough end and any leaves. Chop or separate florets. Peel and mince red onion and ginger. Wash chicken breasts, pat dry, cut in fine strips and season with salt and pepper.Heat a wok or large skillet. Add 1 T oil and heat. Fry the chicken in the hot oil for 2-3 minutes and remove from pan. Reduce the heat, add another 1/2 T oil if needed and add onion. Saut? gently for a few minutes, until tender. Add ginger and saut? until fragrant. Add curry paste and saut? for another minute before adding the sweet potato and cauliflower. Stir to coat all vegetables with the spicy mix and saut? for a further 3 minutes. Pour in coconut milk and stock, heat to a boil and lower the heat. Simmer for 10-15 minutes, until the sweet potatoes are almost done. Add the chicken and tomatoes and simmer for 5 for minutes on very low heat, or just switch off the heat.Season with salt and pepper to taste.Serve in bowls over basmati rice or plain.
