1/2 lb red potatoes
2 TB olive oil
1/2 c. chopped onions
1/2 c. chopped green bell pepper
1/2 c. chopped red or orange bell pepper
1 c. chopped chicken, cooked
1 tsp garlic, minced
1 tsp paprika
1/2 tsp thyme
1/2 tsp salt
1/2 tsp pepper
1/4 tsp Cavendar's Greek Seasoning
1/4 tsp Red Pepper Flakes (opt.)

Here is how you make Chicken Hash w/ Potatoes and Peppers:

If chicken isn't already cooked, cook in boiling water about 15 minutes, or until done. Chop.Cook potatoes in boiling water til tender, about 25 minutes. Drain, cool. Cut into 1/2 inch dice pieces.In large skillet over med-high heat, heat oil. Add onion. Cook 2-3 min, then add garlic and bell peppers. Saute about 4 minutes.Stir in potatoes, chicken, paprika, thyme, salt and pepper, Greek sng, and pepper flakes, if using. With flat side of spoon, press hash into even layer over bottom of skillet.
