1 lb boneless skinless chicken breast, cubed 1"
6-8 medium red potato skin on, cut into 1/2 cubes
1/3 cup extra virgin olive oil
11/2 tsp sea salt
1 tsp fresh ground black pepper
2 tbsp garlic powder
2-3 tbsp Cholula hot sauce. ( add more if you like it spicier)
1 tbsp paprika

2 cup shredded Mexican blend cheese
1 cup crumbled bacon (I actually cook one package Farmland Bacon and crumble 3/4 of the package.)
1 cup diced fresh green onion

Here is how you make loaded Chicken and Potatoes:

Pre heat oven too 400Spray to coat with cooking spray a 9x13" baking dishIn large bowl, wish together olive oil, sea salt, black pepper, paprika, garlic powder, and hot sauce. Add cubed chicken and potatoes. Stir to coat. Pour chicken and potatoes into dish. Bake for 55-60 minutes, stirring every 20 minutes until cooked through, crispy and browned on outside. While potatoes and chicken are cooking, fry your bacon and drain on a paper towel. Cook 1/2 package. We like a lot so I cook the whole package. Once potatoes and chicken are fully cooked, remove from the oven. Top with shredded cheese, bacon and green onions. Return the casserole to the oven and bake for five minutes or until cheese is melted. Serve with extra hot sauce and/or ranch dressing or sour cream.
