1 Package boneless skinless chicken breast
1 Can unsalted squash
2 Medium onions chopped
3.5 Tablespoons of olive oil
3.5 Tablespoons curry powder
5 Cloves Garlic
4 Tsp ginger root
4 Ounce regular beer
1 Container fat free greek yogurt
2 Cups chopped carrots
1/4 Cup milk
Salt
Pepper


How Do I Make Ultralight Curry Pumpkin Chicken?

Here is how you make Ultralight Curry Pumpkin Chicken:

This is a labor intensive dish, but it was really worth it. Make sure you have a wok, a paddle, and a large mixing bowl as you will be transferring back and forth between the wok and the bowl. Get the wok started heating up on medium. Cut the chicken into 12" cubes and place into large ziploc bags. Add soy sauce. Crush ginger and garlic in a garlic press, and add to bag with 1 tablespoon black pepper. Chop remaining ingredients into 1/2" pieces. Turn wok up to high, and wait until it is ripping hot. Add 1/2 tablespoon oil. Add carrots, and sprinkle with salt. Toss and stir fry until thoroughly browned Remove to bowl. Add another 1/2 tablespoon of oil, and add onion, sprinkle with salt, and stir fry until highly browned. Remove to bowl with carrots. Add another tablespoon of olive oil to wok, allow to heat until it smokes, and dump entire chickeny contents of bag and marinade into pan. Stir fry until the sides are all golden brown and the sauce begins caramelizing. Add a couple tablespoons of beer, and the curry powder and remaining oil and stir vigorously until the sauce just starts to burn. Return vegetables and their juices and 1/4 cup water to the pan and mix thoroughly. Allow to simmer. Combine remaining ingredients in mixing bowl and stir until smooth and consistent. add to pan and stir consistently for a several minutes until it is boiling. Turn down to low and simmer stirring occasionally to make sure it doesn't burn, and simmer for 20 minutes. Serve over rice. Put it in your mouf.
