1lb. Tyson boneless, skinless chicken breast
2 Tbsp. Wildtree Hickory Smoked Grapeseed OIl (divided)
1 cup chopped yellow onion
1 cup celery chopped
1 Med. Green Bell Pepper chopped
4 garlic clove minced
1 15oz. can (2 cups) Del Monte Diced Tomatoes, No Salt Added
1 can (2 cups) Kroger Clear Chicken Broth
2 Tbsp. Contadina Tomatoe Paste
1 cup (dry) Nature's Earthly Choice Quinoa
1/4 cup Scallions chopped
2 Tbsp Wildtree Cajun Seasoning (divided)
1/4 cup parsley fresh
1/4 cup basil fresh
2 bay leaves


How Do I Make Cajun Chicken Quinoa Skillet?

Here is how you make Cajun Chicken Quinoa Skillet:

Pat chicken dry and and season with 1 Tbsp Cajun Seasoning. Slice chicken down to make browning easier. Heat 1 tablespoon Hickory Smoked Grapeseed Oil in a large nonstick skillet over medium high heat. Add chicken and saute' both sides until cooked through. Transfer to plate. In the now empty skillet, heat the remaining 1 tablespoon Hickory Smoked Grapeseed Oil over medium heat. Add the onion, celery, and bell pepper. Saute' 7-10 minutes or until onion is translucent. Add the garlic, tomato paste, and remaining 1 tablespoon Cajun Seasoning. Stir until everything is combined. Add the tomatoes and stock; bring to a boil. Add the quinoa and bay leaves. Reduce heat to low, cover and simmer about 20 minutes or until quinoa is tender and liquid is absorbed. Stir occasionally. Stir in the basil, scallions, parsley, and chicken. Cover the pan, remove from heat and allow it to warm chicken through. Season with salt and pepper if desired. Remove bay leaves before serving.
