1/4 red bell pepper, chopped
1/4 orange bell pepper, chopped
small onion, chopped
1 clove garlic, minced
drizzle olive oil for saute
Jamaican Jerk spice to taste
turmeric to taste
salt and pepper to taste

Here is how you make Quinoa and Chicken (peppers/onion):

In a small saucepan prepare quinoa according to package directions.In a skillet, saute small onion in olive oil, salt, and pepper over med-high heat. When onions have browned slightly add garlic and saute for a minute. Add chopped peppers and cook until soft, and juices are released. Add chicken and cook until juices run clear. Add cooked quinoa and spice to taste. (For better browning of chicken, remove juices, or add peppers after browning chicken and allow to cook until peppers are soft)This recipe keeps well in a closed container in the refrigerator for several days.
