1/3 cup Smucker's Low Sugar Apricot Pereserves
1/4 cup Water
2 tbsp Yellow Mustard
2 tbsp Reduced Sodium Soy Sauce
1 tsp Ground Ginger
2 cups Uncle Ben's Whole Grain Brown Rice (uncooked)
1 medium/big spray Olive Oil


How Do I Make Apricot Ginger Chicken and Brown Rice?

Here is how you make Apricot Ginger Chicken and Brown Rice:

This is a great dinner for 4. If you are only serving 2, make the sauce the same but don't use all of it and only use half the rice and chicken.Start by preparing Brown Rice as directed.In a separate pan spray the Olive Oil so the pan is well coated. Cook chicken over medium heat until it is lightly browned and no longer pink in the middle. (hint: the less you turn the chicken the better it will brown). While the chicken cooks, mix the remaining ingredients in a bowl. Once the chicken in done cooking cut it into bite size pieces and place it back in the pan along with the sauce. Mix together and cover. Heat on low for about 5 minutes.
