How Do I Make Basil Chicken and Rice?Here is how you make Basil Chicken and Rice: Before you start the chicken, put 1/4 cup of rice and 1/2 cup of water into a saucepan. Bring to a boil. Then turn down the heat to low, cover, and simmer for 10-15 minutes or until there is no water at the bottom.Start with the thigh, and keep the skin on at first. Cook in the microwave, covered, for 6-7 minutes on each side. In a skillet or wok, add the olive oil, soy sauce, and half the pepper. (The oil can be left out if desired.) Then, place the thigh, still skin-on, into the skillet with the skinned side up. Peel back the skin, and drizzle about 1/4-1/2 teaspoon soy sauce onto the chicken, along with the rest of the pepper, basil (Ground in your palm), and garlic powder. Cover the skillet and cook on medium low until cooked all the way through. Cook the peas according to the directions a few minutes before chicken is done.To serve: Remove the skin from the chicken. Place cooked chicken on a plate, add the rice in a pile next to it, then add the peas in a separate pile. Take the orange and cut into circular slices. Place in a fan pattern near the outside of the plate, leaning against the rice. Drizzle a small amount of the oil from the skillet over the rice. Serve with white or red wine.
