Here is how you make Cajun Chicken (Un)fried Rice:

Serves 4 Saute the sliced chicken breasts in a non-stick pan (no oil) until browned. Add the sliced onions and continue cooking until softened. If using fresh garlic and chillis instead of dried, add them now. Add the broccoli, red pepper and mushrooms. When the vegetables are softened, add the rice, dried garlic and chillis (if using) and a generous amount of cajun seasoning. Stir and toss until well mixed and the rice is heated through. Serve.If you're very hungry, add 4 beaten eggs when you add the cooked rice. Stir through and cook until the rice is hot and the eggs have cooked.
