I added a couple extra seasonings to this recipe from Campbell's - chili powder and seasoned salt. Just a sprinkle of each really beefs up the flavors of this casserole. I also highly recommend trying this with long grain and wild rice, pork chops instead of chicken, golden mushroom condensed soup instead of cream of chicken...and you can really try all kinds of veggies, from corn and peas to asparagus!

2 cups mixed vegetables (for this recipe, I used 3/4 cup frozen broccoli, 0.25 cup frozen cauliflower, 1 cup canned green beans, and 1/2 cup baby carrots)
1 tsp Onion Powder
1/4 tsp fresh ground black pepper
Dash of Lawry's Seasoned Salt (approx 0.25 tbsp)
Dash of chili powder (totaste)
1/3 cup of 2% milkfat shredded cheddar cheese
1 1/3 cup water

Here is how you make Cheesy Chicken and Rice Casserole, a la Campbell's:

Heat the oven to 375?F. Stir the soup, water, rice, onion powder, black pepper and vegetables in an 11 x 8 x 2-inch baking dish. Top the rice mixture with the chicken (I use two breasts, each cut in half, to guage the servings more easily). Sprinkle chicken with chili powder and seasoned salt, then cover the baking dish with foil. Bake for 50 minutes or until the chicken is cooked through and the rice is tender. Top with the cheese.
