Here is how you make Chicken ala Bess:

1. Wash and slighty beat chicken breast pieces.2. Use 1 tbsp olive oil (or Pam) to spray "grill pan". Cook chicken until no longer pink and juices run clear, flip often.3. While chicken is cooking, take diced onion and red pepper and saute in 1 tbsp olive oil in pan.4. Add pineapple bits to onion/pepper toward end of cooking.5. Just before chicken is done, brush both sides of chicken pieces with 2 tbsp. of the barbecue sauce - think layer only.6. Place rice on plate, then chicken, then peppers/onion/pineapple mixture.
