1 Tbs Olive oil
2 cups brown rice, cooked
2 boneless, skinless chicken breasts, cooked and shredded
1 cup diced or finely chopped lean ham
1 cup chicken stock or broth
2 Tbs light cream cheese
1/2 cup each shredded cheddar and Swiss cheeses
Salt and pepper to taste

Here is how you make Chicken and Rice Cordon Bleu Casserole:

Prepare rice, and cook and shred chicken if necessary. This is a great way to use leftover chicken or turkey, or to use extra rice from another meal. Cook onions and peppers in olive oil until tender. Add chicken and ham, salt, pepper, and chicken broth. Stir in cream cheese. Add rice and combine. Add half the shredded cheeses and combine. Place in a greased or foil lined 9x9 casserole dish and top with the remaining cheeses. Top with bread crumbs if desired (not included in nutrition info). Bake at 350 for 25-30 minutes, covering with foil for the last 10 minutes. Can be covered and put in the fridge overnight, or frozen for later.
