Add rice. Toast by cooking at medium heat until rice turns light brown and pops. It smells really good at this point. 1/2 way through toasting, add onions, cook until translucent and rice is totally toasted. Add carrot and celery, cook 1 min, to get it sauteed. Add broth. Can add more fluid if needed. Add chicken and garlic (chopped or pressed) at the end. Can use herbs to flavor. I like: parsley, additional onion powder or dehydrated onion, Mrs. Dash, salt, and pepper. If you use bouillon, you might want to check the salt. A little dill can be used too. This is a very adaptable recipe. I sometimes add spinach or other greens to the rice. It can be more Asian, by adding ginger and soy sauce, or kept as is. Each person is going to want more, so you might want to double the recipe. if you are vegetarian or vegan, you can cook 1 cup diced tofu, tempeh, jackfruit, or seitan in the oil, then when brown, remove, leaving as much oil as possible, then add rice, and continue recipe. It works well with other proteins. Fried rice is made differently, so this is not quite the same.
