1.5 cup Frozen Peas
1/2 Cup Reduced Fat Sour Cream
1/2 Good Season Italian Dressing Mix packet
1-8oz. Fat Free Cream Cheese
1-10oz. Can Fat Free Chicken Broth
1 Cup Fat Free Half and Half
1/2 Cup Parmesan Cheese
1/2tsp Garlic Powder
1.5 Cup of Water
2tbl Flour
5 Cups of Cooked Long Grain Rice

Here is how you make Chicken and Rice w/ Peas Casserole:

1. Boil chicken in water. Season water with herbs of your choice, onions, and celery (if you like). Remove from water once done, allow to cool, and cube.2. Cook rice following package instructions. Do not add salt. You'll need 5 cups of cooked rice. This will be around 2 cups uncooked. 3. In a separate pot, make sauce by mixing 1.5 cup of the water you used to boil the chicken, garlic powder, cream cheese, half and half, sour cream, Good Season packet, and chicken broth. Mix in the flour before the sauce heats up to thicken it a bit. Cook until all ingredients are well blended. Reduce heat to simmer. Add chicken and peas.4. Spray 9x13 pan and line with the 5.5 cups of rice. Pour chicken mixture on top. Sprinkle with Parmesan cheese. Cook in oven for 15-20 minutes.-----------------------------------Tips:*You can reduce sodium by using reduced sodium chicken broth or omitting the Good Season mix.*Add fiber by using brown rice.* You can omit the rice and serve this with noodles or another brown pasta.* I boil my chicken with lots of fresh herbs, some fresh celery and fresh onion to add flavor.
