1 cup frozen peas
1 cup fresh onions, chopped
3/4 cup fresh carrots, chopped
1 cup broccoli, small florets
1 cup snow peas, chopped
1/3 cup egg whites
3 cups short grain brown rice, cooked
3 T. soy sauce
3 cloves garlic, minced
1 can premium chunk white chicken in water, drained and mashed
1 T. Extra Virgin Olive Oil


How Do I Make Chicken Fried Rice - Healthy and Tasty?

Here is how you make Chicken Fried Rice - Healthy and Tasty:

Cook 1 1/4 cups (dry) short grain brown rice. While this is cooking, chop broccoli and snow peas and set aside in a bowl with frozen peas. Chop carrots, onions and garlic and combine in a bowl. Heat large Wok or skillet on medium with 1 T. Extra Virgin Olive Oil and saute onions, garlic and carrots until mostly tender. Add in remaining vegetables and saute until slightly crispy. Add to pan 3 T. soy sauce and can of shredded chicken. On top of chicken, spread in 3 cups of cooked, brown rice. Pour the egg whites evenly over rice and begin mixing the whole recipe together (eggs will cook from the heat of the pan and the food). Saute for 3-4 more minutes and serve hot.
