Here is how you make Chicken Fried Rice with Ginger and Orange Zest:

use the olive oil to saute the celery, garlic, onion and peas -- in a non-stick pan set aside in a strainer to strain off extra oil. cook rice according to directions. put cooked rice in the non stick pan with the residue of the oil. when it starts to pop, add beaten raw egg and stir like crazy. add vegetables and cooked chicken (mine was left over). add the zest from an orange and about a tsp of chopped fresh ginger. cook until the chicken is warm. my husband liked it with soy sauce.Serving Size: 2 servingsNumber of Servings: 2Recipe submitted by SparkPeople user DKLITTLE80.
