2 pounds boneless, skinless chicken breasts, trimmed
2 tablespoons extra-virgin olive oil
2 leeks, chopped and rinsed
1 1/2 pounds mushrooms, sliced
1 cup dry sherry (see Note)
1/4 cup all-purpose flour
2 cups low-fat milk
1/2 cup grated Parmesan cheese
1/2 cup reduced-fat sour cream
1/3 cup chopped flat-leaf parsley
1 teaspoon salt
1/2 teaspoon freshly ground pepper
2 cups frozen French-cut green beans
1/2 cup sliced almonds

1- combine rice and water. Bring to boil, then reduce to simmer, about 40 minutes.2-place chicken in sauce pan. Add water until covered. Bring to boil, cover, reduce heat and simmer approx. 10-15 minutes or until no longer pink. Remove from water and let cool.3-over medium heat, heat oil in skillet. Add onion and sautee until starting to turn brown. Add mushrooms and cook until liquids are released and evaporated. Add Sherry, turn heat up to high and reduce sherry until most liquid has evaporated. Sprinkle with flour and mix until coated. Add milk, reduce heat and bring to simmer for 1 minute while stirring. Stir in parsley, sour cream, parmesan and salt and pepper. Remove from heat.4- preheat oven to 350. Coat 9x13 pan with cooking spray.5-chop chicken breast. Spread rice on bottom of pan. top with cut chicken, then put frozen green beans on top of that. Finish with the sauce and top with almonds. Spread all layers evenly.6-bake at 350 for 30 minutes, or until casserole is bubbling and almonds are golden brown.
