1 TBSP sesame oil
1 TBSP peanut oil
1/4 cup slivered almonds
3 cups chopped cabbage
6 oz chicken breast, cooked
1/2 cup fresh mushrooms
3 cups beef broth
1 tsp minced garlic
1/4 cup green onions
1 cup frozen peas
2 TBSP soy sauce
1 cup brown rice, cooked


How Do I Make Chicken rice and cabbage?

Here is how you make Chicken rice and cabbage:

Cook rice according to package. Simmer mushrooms in beef broth and garlic for approx 1/2 hour. While mushrooms and rice are cooking, spray fry pan with cooking spray and add chicken. Season and brown on each side. Add 1/2 cup water, cover and simmer until done, approx. 20 min. While mushrooms, rice and chicken are cooking, chop vegetables. (I prepare chicken, rice and mushrooms ahead of time.)In another pan, add peanut oil and chopped cabbage. Saute until cabbage starts to get limp and add almonds. Saute additional 3 to 5 minutes. Add frozen peas, drained mushrooms and onions. Saute until peas are warm, about 5 minutes. During this time, cut up chicken and add to pan. By now, rice is done cooking. Spread mixture to side of pan and add sesame oil and rice. Season with soy sauce to taste.
