1 C carrot strips
1 pkg mushrooms - sliced
1 T crushed red pepper flakes
1 T peanut oil

Sauce:
1 lime wedge
1 garlic clove - minced
1/4 C peanut butter
1 tsp soy sauce
1 tsp honey
3 tsp brown sugar unpacked
1 tsp dijon mustard
1 tsp chile paste
1/4 C water
.5 T flour

1.5 C whole grain brown rice

Here is how you make Chicken Satay over Brown Rice:

Cook your rice per the directions on the box. In a microwavable dish (I use a large measuring cup) add all the ingredients for the sauce except the flour, heat in microwave for 1 minute - stirring 1 time half way through. Now add the flour and mix together until all is incorporated.Saute the chicken in a very hot and large skillet with the peanut oil and crushed red pepper flakes until almost cooked through, about 4 minutes (depending on how big your strips are) then add the veggies and finish stir frying until veggies are cooked.
