Lots of dicing required because fresh veggies are awesome. I never thought I would say that... considering all my life I've only eaten green beans and peas. But this has 7 different veggies in it and I LOVE it as I'm trying to learn how to eat more vegetables. It also stretches the volume of the rice so you end up with 8 1 to 1 1/2 cup servings instead of the 1/2 - 3/4 of a cup if it were just the rice. I use Nishiki (sushi) rice to make it a little softer and stickier... that way I can enjoy it with half brown rice.

Here is how you make Chicken Veggie Fried Rice (half brown rice):

Cook the rice according to package directions (50 minutes for brown, 20 minutes for white). Doing this early and refrigerating the rice will make it easier to fry... leftover rice is the best! Otherwise, just start this first and work on the veggies and chicken while you are waiting for the rice.Spray a skillet with cooking spray and add the chicken. When the chicken is cooked, let it cool and cut into small cubes. Peel the garlic and mince (or use a garlic press). Dice the vegetables into appropriately sized pieces. For me, this means small so the texture of the veggies is masked by the rice. The biggest pieces were less than half an inch square.Using a large skillet, put 1 tablespoon of oil in the pan. Add the garlic and onions first and saute until softened (about 3 - 5 minutes on high heat). Add the rest of the vegetables and dust with garlic salt and pepper and stir fry them for 5 - 10 more minutes, depending on how done you like your veggies. Either remove the veggies from the skillet or push them to the edges of the pan to make an open space for the rice. Add 1 tablespoon of oil to the pan and then add the rice. Break up any large chunks of white rice (brown is usually just fine) and let fry on one side for a few minutes on high heat. Turn the rice and toss around for a few more minutes. Sprinkle the rice with the soy sauce. As it soaks down into the rice and hits the pan you should hear a loud hissing sound. Dust the rice with garlic salt and pepper, to your liking. Continue flipping the rice/adding soy sauce until you are happy with the color and pieces of fried chunks. It is usually a very pale brown color.Mix in all the veggies and chicken with the rice, making sure to mix in the seasonings. When things are well mixed, push the rice to the sides of the pan to make a small hole in the center. Crack the 2 eggs into the hole and scramble them (try to avoid mixing in any of the rice or veggies). When the egg is cooked, mix everything together tossing around as much as possible, turn off the heat, and you're done!!
