1 oz dried porcini mushrooms
4 c. broccolli florets
2 oz lo-fat cheddar cheese, shredded
1 tsp olive oil


How Do I Make Chicken with Wild Rice?

Here is how you make Chicken with Wild Rice:

Cut chicken into 1 inch chunks. Brown in a non-stick pot misted with olive oil. While the chicken is browning, soak dried mushrooms in boiling water. When the mushrooms are soft, use a slotted spoon to remove them from the liquid. Retain the liquid. Chop the mushrooms and add to the chicken. Add the package of long grain & wild rice mix to the chicken, add water to the mushroom liquid as needed to fulfill the water requirement on the rice package. Add the liquid to the chicken/rice mixture, cover and simmer 5mins. Add the broccolli florets, cover, and continue simmering until rice is tender and all water is absorbed.
