1 medium carrot, peeled and chopped
1 small head brocolli, chopped
2 tsp. each: salt, pepper, thyme, Mrs. Dash seasoning, garlic powder
1 c. chicken stock
1 c. lowfat mozzarella cheese, shredded

Here is how you make crispy chicken and rice bake:

Put rice, water, and margarine in saucepot with cover. Bring to boil and cook 20-25 minutes or until rice is fluffy.In a large non-stick pan, heat 1 tblsp. olive oil. Add chicken chunks and begin browning. Add all vegetables and seasonings. Cook, stirring often, until onion turns translucent. Add chicken stock and bring up to boil. Turn heat down to low and cook 10 minutes. Preheat oven to 375 degrees.Remove rice from heat and turn the same burner to medium high. Brush the inside of a 10" cast iron skillet with margarine. Place on hot burner and let skillet heat until just smoking. Pour rice into skillet and press all around and up sides. Let cook for 7 minutes. Remove chicken mixture from heat and pour onto rice. Cover all areas, then sprinkle cheese over top. Place in oven and bake 25- 30 minutes, or until cheese bubbles. Remove pan from oven and let sit 5 minutes.
