Here is how you make Easy Chicken and Yellow Rice:

Preheat oven to 350. Saute chopped onion and green pepper in Olive Oil til tender. Debone chicken and tear apart into bite sized pieces. I pull skin off as well. Cook rice according to package instructions. In a 2 quart casserole combine sauted vegetables, chicken, and rice. Add seasoned salt and pepper to taste.
