Here is how you make Filipino Chicken with Adobo and Garlic Fried Rice:

Remove skin and bone from chicken thighs - if too difficult to remove bones - just leave them in.Combine chicken, garlic, bay leaves, vinegar, soy sauce and 1/2 c. water in a large pot.Heat until boiling and stir frequently. Turn heat to medium and let simmer for about 30 minutes. Stir occasionally.Steam the rice and chop garlic cloves into small pieces.In a non-stick pan (or wok) add 1/2 Tbsp of Olive oil and let it heat for 1 minute till it starts to smoke a little. Add the garlic and let it sautee for about 30 seconds...then begin adding in rice one cup at a time constantly moving it around to blend with the garlic.
