Spray skillet with cooking spray. Add chicken and cook through. Add garlic and scallions. Cook for 3 minutes. Add rice, pepper, edamame, and corn. Heat through. Make a well in the center of the skillet and spray with cooking spray. Add beaten eggs. After eggs are cooked combine with rice mixture and add soy sauce.One serving is 1 1/2 cups.
