Chop scallions, peppers and chicken while cooking rice and corn. I use 10 minute rice. Scramble egg whites, set aside. In a large skillet, cook garlic, peppers and scallions over medium heat. Add chicken, corn, egg whites, rice and soy salt. Toss to coat and let flavors seep into chicken and rice. Add salt, pepper, garlic powder and onion powder to taste. Makes 6 servings.
