3/4 cup Jasmine Rice
1/2 fresh pineapple (cored & peeled)
1 tbsp vegetable oil
3 cloves garlic, minced
1/2 cup yellow onion, diced
Sea Salt (or other coarse salt)
1 oz. Spiced Rum (like Captain Morgan's)
1 cup chicken broth
2 boneless, skinless chicken breasts
a handful of chopped fresh cilantro.


How Do I Make Island Chicken?

Here is how you make Island Chicken:

Cook jasmine rice according to package directions. Heat a skillet over high heat. Add vegetable oil, garlic, onion, and red pepper flakes and saute. Add pineapple and a pinch of salt and stir. In the meantime, season the chicken breasts with salt and pepper and grill (or cook in a separate skillet--approx. 6 minutes per side). Remove pineapple from heat and add rum. Carefully add pan back to heat to avoid flare ups. Let alcohol cook off for 1 minute, then add chicken stock. Once chicken is finished, allow to rest for a few minutes before slicing thinly and stirring into pineapple mixture.
