3 slices turkey bacon
1 medium onion
1 bell pepper

Here is how you make Jennys chicken and rice:

1. In a pan, bring 2 cups chicken broth to a boil. Add 2 cups minute rice to chicken broth. Set aside.2. Fry bacon until done. Crumble into small pieces. Cut chicken breast into chunks. Brown in 1 tsp oil until no longer pink. Drain oil but do not discard.3. Slice onion and bell peppers into thin strips. Open peas and carrots. Drain. Saute all in 1 tsp of butter. 4. Mix all ingredients in a large bowl. If rice is sticky, pour small amount of oil reserved from chicken over it. This will help to give it a little coating.5.
