Grill chicken breasts, set aside to rest. Drizzle olive oil in a deep skillet or Dutch oven and heat until shimmering, but not smoking. Add onions, celery and carrots and saute until onions turn translucent, about 5 minutes. Add oregano and rice and mix well, then pour in stock. Bring to boil, stir again, reduce heat to simmer and cover.
