Here is how you make Karrie's "So Good" Chicken and Rice:

Cover 1 roaster chicken with water, salt and pepper to taste and boil until done. Let cool, remove the bones and shread. In a stock pot add approximately 2 cups of the shredded chicken and 2 - 3 cups of stock the chicken was boiled in and cook until boiling. Reduce to medium low, add in the mushroom with juice and carrots. Cook until the carrots are tender (approximately 20 minutes) and add the rice.
