rub chicken thighs liberally with oil and toss with paprika, onion powder, garlic powder, salt and pepper (all to taste) and marinade, covered.make chapatis by mixing 1 tsp salt and the flour mix togeherthen adding water. knead on lightly floured board, adding flour when necessary till no longer sticky and still pliable. leave covered with moist cloth for 30 minutes. start water in large pot to boil, when boiling add rice and bring to boil again.saute onions in sm. amt. of oil, add garlic when almost finished, saute 30 seconds then add rappi. saute until wilted, add 1/2 sumac and a pinch of salt along with the mushrooms. saute until stalks are tender, cover pan and set aside.when rice is soft, drain and cover, set asideuncover flour and water mix, form into long thin roll and cut into ten sections. flatten each section out, cover board with flour and roll each section into a thin disc. place in hot pan with oil and press gently in several places to encourage bubbling.after 1 min., flip bread and fry on other side. make sure there is enough oil in pan at all times!when finished, set chapatis aside, covered.place chicken in same pan that held rappi and chapatis after chapatis was removed.fry chicken thighs with the paprika, a pinch of salt and stir several times. add water if chicken gets dry.when chicken is done, serve! place chapatis on side, make a bed of the rice, add the rappi mix then the chicken. use sour cream if you want, and hummus for the dip.Serving Size: 1 bread, 1/2 c. rice, 1/4 c rappi, 1/2 c. chickenNumber of Servings: 10Recipe submitted by SparkPeople user NEWALLI.
