Once warm, add the almonds to toast for about 5 minutes. While the almonds are toasting, chop your vegetables and chicken into whatever size pieces you prefer. Also, start preparing your 2 cups of white rice. (Brown rice could be substituted for more nutritional benefits).Empty the almonds into a separate container. Put the olive oil in the pan. Once it is warm, sautee the onions over medium-low heat. Once the onions are translucent, add the chicken and green peppers. Add the lemon juice as needed-- don't let the pan get dry. Cook until the chicken is done (no more pink) and green peppers are cooked to your liking. Just before it will be done, add the tomatoes. Be sure to dispose of the seeds first! While this is cooking, chop the almonds into fine pieces.Lastly, add the fresh mozzarella cheese, breaking apart into small pieces. Let cook for a minute or two more, until the mozzarella starts to melt.To serve, spread the rice over a platter and top with the chicken, vegetable, and cheese mixture.
