? 1 onion, chopped (use 1/2 onion is fine, too)
? ~10 garlic cloves (half of them diced, half of them whole)
? olive oil or butter
? chicken stock (bouillon is fine)
? yellow rice (I like Viggo's saffron yellow rice in the shiny yellow bag. If you can't find yellow rice just use a box of Spanish rice).
? water (see rice instructions for the right amount)
? 1 can of diced tomatoes (with cilantro/lime or italian/mexican seasoning)
? 1 can of black beans
? 1 or 2 chicken breasts, cubed and cooked with cumin, cayanne/chili powder, salt & pepper
? sour cream (Mexican!!)
? avocado (sliced)
? cilantro (torn)




How Do I Make Qui's Cuban Chicken, Rice and Black Beans?

Here is how you make Qui's Cuban Chicken, Rice and Black Beans:

1. Saute onion and garlic in a couple tablespoons of olive oil or butter, 1-2 minutes or until onions start to turn translucent.2. Add the rice and stir a few times for another 1-2 minutes to get the rice to brown a little bit3. Add water (per rice instructions) w/ chicken bouillon cubes/paste, OR add chicken stock (instead of water). 4. Cook according to rice package. (Usually bring to boil then cover and simmer about ~20 minutes.)5. Cook the chicken now if you haven't already.6. When the rice is done, add the cooked chicken, tomatoes and black beans (drain off excess liquid in both cans first - some liquid is fine - more flavor!)7. Stir it all up and cook another 10 - 20 minutes until any excess liquid is gone8. Serve with sour cream, avocado, and cilantro.
