-1 lb. boneless skinless chicken breast
-1/2 C Orange juice, I used 100% juice Tropicana
-1 C unsweetened pineapple tidbits, drained
-2 1/2 C cooked Minute Brown Rice (I cooked mine with the chicken broth) 1 3/4 C dry
-1 1/2 C FF fit and Active chicken broth
-1C diced veggies like carrots, onions, bell peppers
-1 minced garlic clove

Here is how you make Rumbamel's Sweet and Sour Chicken w/Brown Rice and Veggies:

---Boil about 1 1/2 C FF Fit and Active chicken broth and then adding the about 1 3/4 C rice. Bring to a boil again, cover and reduce to simmer for 5 min.. Remove from heat, stir, add veggies and cover again for 5 min. or until moisture is absorbed.---In another skillet cook your chicken over med./low heat. Remove when done and add the orange juice to remove the drippings. Add the rice and veggies, pineapple and then finally the chicken(chopped or diced to your liking).
