Here is how you make Sauteed Chicken and Veggies over Brown Rice:

Cook Brown Rice according to package directions. Saute Chicken in half of the Olive Oil. Remove from pan. Saute Peppers in remaining Olive Oil for about 4 min, add zucchini and continue to saute for 5 more minutes. Add onions and cooked Chicken. Continue to saute until vegetables are tender crisp, season to taste. I use Garlic, Salt, and Pepper. Add a little water at the end to make a little juice. Pour Chicken and vegetables over rice.
