1 Small onion chopped
1 Medium tomato chopped
1 Medium red pepper sliced or chopped
1 medium green pepper sliced or chopped

Here is how you make Simmer Me Chicken:

1.) Cook rice according to package.2.) Spray a large skillet with cooking spray. Cook chicken until the edges start to turn white, then flip. 3.) Sprinkle with pepper, garlic, parsley and oregano, and cook for about 2 minutes. 4.) Place the onion and 1/2 of the tomato on top of the chicken and pour wine, broth and lemon juice over them. 5.) Simmer about 10 minutes, then add the rest of the veggies. Simmer about 10 minutes longer until the peppers are to your liking.6.) Serve over rice and with a salad!
