Here is how you make Simply chicken and rice:

Preheat oven to 350 degrees. Spray casserole dish with olive oil cooking spray. Set aside. Heat skillet and 2 tbsp EVOO. Once oil is heated add chicken. Add 2 tbsp chicken scratch seasoning and mix well. Cook until chicken is done. Drain if necessary and set chicken aside.In the same skillet add remaining EVOO. Once it is heated add flour. Whisk continually until flour is browned. Add chicken broth, milk and remaining chicken scratch seasoning. Continue stirring until thickened. Add chicken and carrots to your rue.
