1. Brown chicken in hot oil in large skillet on medium-high heat. 2. Stir in barbecue sauce, water, corn and pepper; bring to boil. Reduce heat; cover and simmer 5 minutes3. Stir in rice; cover. Remove from heat . let stand 5 minutes ( I usually let stand about 5 minutes more so all liquid is absorbed)Makes 4 servings . Approximately one cup per serving.
