Here is how you make Southwest Creamy Chicken and Rice:

Spray 2 quart casserole with non-stick cooking spray.Put rice, 1 cup water and thinly sliced mushrooms into casserole. Cut chili and onion into long slices. Roll chicken thighs around chili and onion slices and lay on top of rice.Dice any remaining chilis and onions.
