Make brown rice per instructions (can be refrigerated overnight). Cube chicken, saute in 2 tablespoons of olive oil over medium-high heat. Add tomato sauce and salsa, simmer until reduced, approximately 5 minutes. Add to rice. Roughly chop onions and bell peppers (bite-size pieces), and saute in remaining olive oil about 8 minutes.
